Cauliflower SOUP

The garlic, onion, coconut milk and cauliflower are blended together to create a dairy-free, creamy cauliflower soup recipe that I love. In general, creamy soups are a great option for those who have busy schedule and still want to stay fit and healthy. Also, they are easy to save, so you can eat them anytime later on. 

Cauliflower it is one of the most valuable vegetables but it does not have many calories. That is why, it is also a great food to include in your diet if you want to lose weight. Also, the antioxidants in this vegetable detox your body. Moreover, it doesn’t contain starch, so if you think about cutting your carbs intake this vegetable is for you. 

Ingredients:

one cauliflower

3 pieces of garlic

½ onion

3 tablespoons heavy coconut milk 

1 teaspoon of salt or more

some black pepper

olive oil

 

Directions:

  1. Put olive oil in a large pot. Add the onion and garlic to the olive oil and cook until the onions are just tender, about 3 minutes.
  2. Add cauliflower and cover with water. Bring to a boil. Reduce heat to a simmer, cover, and cook until cauliflower is very soft, 20 to 25 minutes.
  3. Add coconut milk and blend until smooth and creamy.
  4. Add salt and pepper.
