PUMPKIN SOUP WITH WALNUTS

Delicious, creamy PUMPKIN SOUP made out of roasted pumpkin and orange peppers. Served with walnuts. 

Ingredients:

around 1 pound of pumpkin / half middle one

2 orange peppers

150 ml of hot water

150 ml coconut milk

1 teaspoon of pink salt

some black pepper

pinch of paprika

walnuts

Directions:

  1. First make pumpkin puree. You need to cut the pumpkin in a half, take the seeds out and cut into big pieces or cubes like me. Next, place pumpkin pieces on a baking sheet and roast them in a 350- degree oven until pumpkin is fork-tender. It took me around 30 minutes, it depends on the size of the pieces.
  2. I also cut the orange pepper into pieces and roasted with the pumpkin. Added pinch of salt.
  3. Place the ready pumpkin in the pot and blend it.
  4. Add roasted peppers, water, coconut milk, salt, some spices if you need it.
  5. Warm it up. Stirring all the time.
  6. Serve with walnuts.
