Cauliflower SOUP
The garlic, onion, coconut milk and cauliflower are blended together to create a dairy-free, creamy cauliflower soup recipe that I love. Ingredients:
one cauliflower
3 pieces of garlic
½ onion
3 tablespoons heavy coconut milk
1 teaspoon of salt or more
some black pepper
olive oil
Directions:
- Put olive oil in a large pot. Add the onion and garlic to the olive oil and cook until the onions are just tender, about 3 minutes.
- Add cauliflower and cover with water. Bring to a boil. Reduce heat to a simmer, cover, and cook until cauliflower is very soft, 20 to 25 minutes.
- Add coconut milk and blend until smooth and creamy.
- Add salt and pepper.
