Roasted Tomato Soup with Feta Cheese 

There’s nothing better than a bowl of Roasted Tomato Soup when the weather is cold outside. This recipe features delicious tomatoes, combined with garlic, onion, and fresh basil leaves. Serve it with crumbled feta cheese and fresh or toasted sourdough baguette.  

Ingredients:  

  • 4-5 large tomatoes  
  • 1 box of small tomatoes  
  • 1/3 of a medium onion  
  • 2 garlic cloves  
  • Fresh basil leaves  

Seasoning:  

  • Pink Himalayan salt  
  • Black pepper  
  • Oregano  
  • Paprika powder (about 2 teaspoons) 
  • Olive oil  
  • Feta cheese  
  • Sourdough baguette  

Directions: 

1. Preheat your oven to 400 degrees F.  

2. In an oven-safe dish, combine the large and small tomatoes, onion, garlic, basil leaves, add some pink Himalayan salt, black pepper, oregano, and a drizzle of olive oil.  

3. Roast in the oven for 40 minutes until everything is tender and the tomatoes are starting to burst.  

4. Once the tomatoes are fully roasted, transfer the mixture (including all the liquid, oils, and tomato juices) to a pot. Add a bit of water and blend until smooth.  

5. Adjust the seasoning with salt, pepper, oregano, and paprika to taste.  

6. Serve the soup topped with crumbled feta cheese, fresh basil, and slices of sourdough baguette.
