Carrot Cake Mini Bars

If you love carrot cake, you will adore these Carrot Cake Mini Bars. This is a quick, no-bake recipe that features fresh carrots, walnuts, cranberries, oats and tahini, sweetened with some honey and placed in the freezer.

Ingredients:
- 1/2 cup of shredded carrots
- A few walnuts, chopped
- A handful of dried cranberries, chopped
- 2 tablespoons of honey
- ½ cup of old-fashioned oats
- About 4 big teaspoons of tahini or more, you can use peanut butter instead
Directions:
1. Wash, peel, and shred the carrot.
2. Chop the walnuts and dried cranberries, then add them to the shredded carrots.
3. In a mixing bowl, combine the honey, oats, and tahini with the carrot mixture.
4. Mix all the ingredients thoroughly and transfer the mixture to a glass container.
5. Place the container in the freezer for a minimum of 1 hour, or overnight.
6. Before serving, allow the mixture to slightly thaw, then cut it into bars.
Store bars in an air-tight container in the fridge or freezer and enjoy at any time.
