Oatmeal Cranberry Cookies

These Oatmeal Cranberry Cookies are a classic twist on traditional oatmeal raisin cookies, featuring dried cranberries instead. These cranberry oatmeal cookies make a great breakfast option to enjoy! They are so delicious and easy to make.

Ingredients: 

  • 1 free-range egg  
  • ¼ cup of melted coconut oil  
  • ¼ cup of honey  
  • some cinnamon 
  • ½ teaspoon of baking soda  
  • ½ cup of oats  
  • 1 cup of whole-wheat flour  
  • Dried cranberries  

Directions: 

1. Preheat the oven to 400°F (200°C).  

2. In a mixing bowl, crack the egg and add the melted coconut oil and honey.  

3. Combine these ingredients with cinnamon and baking soda. Whisk until smooth.  

4. Gradually mix in the oats and whole-wheat flour until fully incorporated.  

5. Line a baking sheet with parchment paper.  

6. Mold the dough into small balls and place them on the prepared baking sheet.  

7. Gently press cranberries into the tops of the dough balls.  

8. Bake the cookies for about 12 minutes, or until golden brown.
