MILLET CAKE – EASTER CAKE
I made my healthy cake by using only healthy substitutes. I can’t believe how amazing can it be to use grains. I used millet as a filling and soaked and blended dates mixed with oats, flax seeds and coconut flakes for the dough. On top, I spread a dark chocolate. All of those making the cake gluten and sugar free.
Ingredients:
Dough:
300 grams of dates
3 cups of oats
1 cup of coconut flakes
½ cup of flax seeds
Layer:
1 cup of millet
1 teaspoon of vanilla extract
½ cup of honey
almond/coconut milk
1 ½ cup of coconut flakes
dark chocolate 70-90%
- Cook 1 cup of millet according to the direction on the box.
- Soak the dates in the hot water for 10 minutes.
- Blend 2 cups of oats in the blender.
- In the bowl, mix dates with blended oats and 1 cup of the regular oats, add coconut flakes and seeds.
- Make a dough, spread and flat on the baking pan.
- Put to the freezer for 20 minutes.
- In the meantime, blend cooked millet with vanilla extract, honey and some milk, you can also add coconut flakes.
- Spread on the dough and melt dark chocolate, spread on the cake.
- Keep in the fridge.
