NATALIA’S BIRTHDAY CHOCOLATE CAKE
My best friend had a birthday and knowing that her great love is a chocolate and a wine I made something special for her.
A CHOCOLATE CAKE WITH CHERRIES IN WINE! You should have had no doubts that this is delicious and healthy!
I used xylitol as a sweetener and oat flour that’s what makes the cake gluten free. However, the daintiest part is soaked cherries in red wine. They go perfectly with a taste of a dark chocolate and you can believe me that there is nothing better than chocolate cake as a birthday cake.
This cake is moist and has the perfect crumb. Now, I cannot imagine making another birthday chocolate cake using any other recipe. It is insanely delicious.
Ingredients:
2 cups of cherry
½ cup of red wine
1 cup of oat flour
1 teaspoon of baking powder
½ teaspoon of baking soda
3 tablespoons of Cocoa
2 tablespoons of coconut oil
¾ cup of Xylitol
2 eggs
100g dark chocolate
½ cup of coconut milk heavy part from the cane
Directions:
- Put pitched cherries to the wine for a few hours. I left them overnight.
- In one bowl, place flour, baking powder, baking soda and cocoa powder.
- In another mix melted coconut oil, xylitol, eggs and milk. Combine together.
- Melt the chocolate and add at the end to the dough.
- Place the cherries on the baking pan.
- Bake for 55 minutes in 350 F.
