CHOCOLATE RICE

Ingredients:

1/2 cup of rice

1 cup of almond or coconut milk

2 tablespoons of cocoa powder

1 teaspoon of cinnamon

1 tablespoon of coconut sugar

TOPPING

coconut flakes

pomegranate seeds

Directions:

Cook rice according to the direction on the box, but substitute water with plant milk of any choice. I like almond milk the most, but coconut milk works well. When the rice is cooked and soft combine with cocoa powder and cinnamon. Add coconut sugar or any sweetener you like. I added some coconut sugar so it will go well with coconut milk and coconut flakes. You can add some more milk, then the consistency will be more creamy than sticky. At the end add coconut flakes and mix it. Use coconut flakes as a topping and what I like to add are those juicy pomegranate seeds. They will add great fresh flavor to your morning meal.
