BASIL AND SPINACH PESTO PASTA 

Pesto Pasta with Homemade Basil and Spinach Pesto, Served with Feta Cheese

Homemade basil and spinach pesto is a fantastic fresh sauce to keep on hand. It’s easy to make and works perfectly with pasta, sandwiches, or as a salad dressing.

Ingredients:

  • 1 cup of fresh basil leaves
  • 2 cups of fresh spinach
  • 2 garlic cloves
  • 1/4 cup of chopped walnuts
  • 3 tablespoons of olive oil
  • Juice of 1/2 lemon
  • 1/4 cup filtered water
  • Pink Himalayan salt, to taste
  • Black pepper, to taste
  • About 60 grams feta cheese

Directions:

1. Wash the spinach and basil thoroughly.

2. In a bowl or food processor, combine the spinach, basil, garlic, and chopped walnuts.

3. Add the olive oil, lemon juice, and filtered water to the mixture.

4. Season with pink Himalayan salt and black pepper.

5. Blend the mixture until smooth. Then, add the feta cheese and blend again until you reach a smooth consistency.

6. Taste the pesto and adjust the salt and pepper as needed.

7. Cook the pasta according to the package instructions, usually about 10 minutes.

8. Mix the pesto with the cooked pasta and sprinkle additional feta cheese on top before serving.
