BUCKWHEAT PANCAKES WITH MANGO

Have you ever tasted sweet version of buckwheat? If not, you should definitely try it out. Using buckwheat in your diet has good health benefits since it is the most healthy grain. It has many proteins, healthy fats and Vitamins as B, minerals as Calcium, Magnesium, Copper, Phosphorus and Zinc. The interesting fact is that according to the Traditional Chinese Medicine, buckwheat keeps your body warm, so put it on your plate during the winter season.

Ingredients:

1 cup of buckwheat
1 teaspoon of cocoa
1 teaspoon of cinnamon
2 eggs
150 ml water
150 ml coconut milk
coconut oil to spread on the pan
1 ripe mango
some coconut flakes and raisins

Cook buckwheat. 2 cups water per 1 cup of buckwheat, rinse it and then dry-roast in pot. Let it cool down. In the food processor, combine the buckwheat with cocoa, cinnamon, eggs. Add water and milk. Bake it by using coconut oil. Spread some coconut oil, next spread the mixture on the pan. Bake for a few minutes, flip the pancake. Take it out and let it cool down. In the meantime, pill the mango off and blend it. Spread the mousse out on the pancake and put some coconut flakes and raisins on the top.
