CARROT CAKE

What can make women happier than delicious piece of homemade cake? For me is nothing better than carrot cake.

Ingredients:
7 dates
4 big carrots
1 1/5 cup whole-wheat flour
2 eggs
200 ml coconut oil
2 teaspoons of cinnamon
1 teaspoon baking powder
100 g grated walnuts

Topping:
coconut milk
coconut flakes 

Soak the dates in the hot water for 10 minutes. In the meantime, peel off and shred the carrots. Blend the dates by using the blender. In one bowl, place dates, eggs, grated carrots, coconut oil.

In another bowl, mix a flour with cinnamon and baking powder. Pour the dry ingredients to the wet and mix thoroughly. Stir until they will be completely combined. Add small pieces of walnuts. Pour into baking tray lined with baking paper and greased. Bake for about 45 minutes in 350 F. After baking, let it cool down.

I made the topping from heavy coconut milk and coconut flakes. Just spread the heavy part of the coconut milk on the cold cake and add the coconut flakes. Let it sit in the refrigerator for about 30 minutes.
