MILLET PORRIDGE
Millet is my favorite type of grain. I like to eat it for breakfast as a porridge or even for dessert. It is rich in Vitamins and has great health benefits. It can give you more energy to start the day.
Ingredients:
1/2 cup of millet
100 ml of coconut milk
2 tablespoons of coconut flakes
5 pitted dates
some raspberries and strawberries
Cook the millet. To cook 1 cup of dry millet, bring it to a boil with 2 cups of water. Turn it down to a simmer and cook until the liquid is absorbed (about 15 to 20 minutes). Let it cool down and add coconut milk. Blend it with coconut flakes, dates, raspberries and strawberries. Put some coconut flakes and raspberries on the top.
You can also combine the millet with milk in a large saucepan. Bring to a boil. Reduce heat, cover and simmer about 25 minutes (without stirring). Continue to cook partially covered until desired consistency. Let it cool down. Blend it with the rest of ingredients. Enjoy!
