SWEET POTATO BROWNIE

Did you ever think about sweet potato brownie? Yess, this vegetable work great as a base in the baked goods. Sweet potatoes will add not only sweet taste to your cake but also you will get all of the health benefits of them each time you take a bite out of the sweet potato brownie, isn’t this great ? And they contain a lot … vitamins… and tons of antioxidants, which help to keep your skin looking awesome. But the most important, they are so delicious.

Ingredients:

2 medium sweet potatoes

1 egg

⅓ cup of agave syrup

½ cup of coconut milk

½  cup of soya milk

1 cup of brown rice flour

1 teaspoon of baking powder

4 tablespoons of cocoa powder

 

Frosting:

⅓ cup of coconut oil

2 tablespoons on cocoa powder

2 tablespoons of agave syrup or honey

2 tablespoons of milk

Directions:

  1. Wash, peel and cut sweet potato into pieces. Steam them till soft.
  2. In the bowl, place mashed sweet potatoes. Add egg, agave syrup and milk. Mix it together.
  3. Add dry ingredients. Mix it together.
  4. Put some coconut oil on the baking pan and place the dough.
  5. Bake it for 30 minutes in 350 F.
  6. In the meantime, make a frosting. In the pot, warm coconut oil, cocoa powder, agave syrup and milk.
  7. Mix it by spoon, until creamy and smooth.
  8. Spread it on cold cake.
