VEGAN VERSION OF A CHOCOLATE CAKE MADE WITH BLACK BEANS

On the top with amazing little super fruits as goji berries, packed with natural antioxidants, over 21 minerals and Vitamins. 

Ingredients:

1/2 cup of cooked buckwheat
1 cup of black beans
1 banana
1 teaspoon of baking powder
1 teaspoon of cinnamon
2 tablespoons of cocoa
2 tablespoons of honey
1 handful of raisins
goji berries
coconut oil to spread out on the pan

Cook buckwheat. Place 2 cups of water in a medium heavy bottomed sauce pan, and bring to boil. Add buckwheat groats, cover tightly, bring to strong boil again, reduce the heat to low. Simmer covered (without opening the lid) for 20 minutes. Remove from heat and let it cool down.

Preheat the oven to 350 F. In the food processor, combine ½ cup of the cooked buckwheat with black beans and the rest of the ingredients from the list, except raisins. The raisins put at the end. Mix it together. Spread coconut oil in the baking pan. Place it in preheated oven and bake it for 60 minutes. The cake does not grow a lot. It is going to look thin. However, it tastes delicious. Put the goji berries on the top of cold cake and enjoy.
