Creamy Avocado Pasta
This creamy avocado pasta is a perfect option for a quick dinner. It’s ready in just 15 minutes! I used pasta made from lentils, peas, and chickpeas to boost the protein content, but you can use any type of pasta you prefer. The sauce is delicious and incredibly easy to make—just blend all the ingredients and mix with the pasta.
Ingredients:
- 1 cup of pasta (I used protein pasta made with lentil, pea, and chickpea flour)
For the Avocado Sauce:
- 1 ripe avocado
- 2 garlic cloves
- 1 handful of fresh parsley
- Juice of ½ lemon
- 1 tablespoon of olive oil (15ml)
- 3 tablespoons of filtered water
- Salt to taste
- Black pepper to taste
- Red pepper flakes (to taste)
Directions:
1. Bring water to a boil. Cook the pasta for about 10 minutes, then drain well.
2. In a bowl, combine fresh parsley, garlic cloves, lemon juice, olive oil, and water. Season with salt and black pepper.
3. Mix the cooked pasta with the sauce and sprinkle with red pepper flakes before serving.
