This dish is one of those with minimal ingredients and is both comforting and filling, ready in just 15 minutes. The flavor comes from slow-cooking the zucchini in oil, followed by seasoning. Ingredients: 

  •  3/4 cup of whole wheat pasta  
  • 1-2 zucchinis (or more, if desired)  
  • About 2 tablespoons of olive oil  
  • Salt to taste  
  • Black pepper to taste  
  • Oregano  
  • Arugula  
  • Red chili flakes  

Directions: 

1. Bring water to a boil and cook the pasta for about 10 minutes. 

 2. Meanwhile, slice the zucchini.  

3. In a large skillet, heat about 1 tablespoon of olive oil and cook the zucchini until tender. 

4. Season with salt, black pepper, and oregano.  

5. Combine the cooked pasta with the zucchini, drizzle with the olive oil, add arugula, and sprinkle with red chili flakes to spice it up.
