ZUCCHINI and BROCCOLI MUFFINS
I made some ZUCCHINI and BROCCOLI MUFFINS last week. I got this great recipe from @mniammniam_bez_glutenu . However, I changed it a little bit and also added chia and flax seeds to those muffins. They are delicious gluten free breakfast solution.
6 muffins
Ingredients:
½ cup of oat flour
½ cup of brown rice flour
1 teaspoon of chia seeds
1 teaspoon of flax seeds
1 teaspoon of baking powder
2 eggs
½ cup of milk
2 tablespoons of olive oil
1 shredded zucchini
2 handful of steamed broccoli
Directions:
- Shred the zucchini and steam the broccoli.
- In the one bowl, mix all of the dry ingredients.
- Add eggs, milk and olive oil.
- Stir it and add vegetables.
- Mix it everything together.
- Spread some olive oil spray on the muffin pan and place the dough.
- Bake it for 30 minutes in 350 F.
