ZUCCHINI and BROCCOLI MUFFINS

I made some ZUCCHINI and BROCCOLI MUFFINS last week. I got this great recipe from @mniammniam_bez_glutenu . However, I changed it a little bit and also added chia and flax seeds to those muffins. They are delicious gluten free breakfast solution.

6 muffins

Ingredients:

½ cup of oat flour

½ cup of brown rice flour

1 teaspoon of chia seeds

1 teaspoon of flax seeds

1 teaspoon of baking powder

2 eggs

½ cup of milk

2 tablespoons of olive oil

1 shredded zucchini

2 handful of steamed broccoli

 

Directions:

  1. Shred the zucchini and steam the broccoli.
  2. In the one bowl, mix all of the dry ingredients.
  3. Add eggs, milk and olive oil.
  4. Stir it and add vegetables.
  5. Mix it everything together.
  6. Spread some olive oil spray on the muffin pan and place the dough.
  7. Bake it for 30 minutes in 350 F.
