Creamy Zucchini Soup
Zucchini Soup is very low in calories and works perfect as a detox soup. If you feel like you would like to do a cleanse, this soup is for you. Zucchini promotes healthy digestion, cleanse the body and has a lot of nutrients. Even one up to three days consuming this soup will help your body take a nice rest and feel better. In addition, this soup is really light and tasty.
Ingredients:
- ½ medium sized onion
- 1 tablespoon of olive oil
- green and yellow squash (about 5-7 medium sized zucchinis)
- filtered water
- 1 teaspoon of himalyan salt or more
- ½ teaspoon of black pepper
- oregano
Directions:
- Cut the onion into cubes. Heat some olive oil on the bottom of the pot.
- Place the onion and cook for about 3-5 minutes stirring from time to time.
- In the meantime, wash and cut the squash into small pieces.
- Add the squash and fill the pot with water. Zucchini already contains a lot of water, so you do not need fully fill the pot. ¾ of the pot works well.
- Cook for 30 minutes over medium heat.
- Add seasoning (taste it and add more if needed).
- Blend to achieve creamy consistency and serve.
