Cranberry Tart

Ingredients:
Filling:
- 1 package of fresh cranberries (about 2 ½ cups)
- 1/3 cup of honey
- 1 cup of water
Crust:
- 1 free-range egg
- 1/3 cup of honey
- ½ cup + 2 TBS of melted coconut oil
- 1 teaspoon of baking powder
- 1 teaspoon of cinnamon
- 2 cups of whole wheat flour
Directions:
1. To make the filling, wash the cranberries and place them in a small pot. Add honey and water. Bring to a boil and let it simmer for about 10-15 minutes, stirring occasionally, until the cranberries pop and the consistency resembles jam. Set aside.
2. In a bowl, whisk together the egg, melted coconut oil, and honey.
3. Add the baking powder and cinnamon.
4. Sift in the 2 cups of flour and combine all the ingredients.
5. Preheat the oven to 360°F (182°C).
6. Grease the baking dish with some coconut oil.
7. Spread the dough in the baking dish and poke with a fork. Then bake for 10 minutes.
8. After 10 minutes, add the cranberry filling and crumble the remaining dough on top of the filling.
9. Bake for an additional 20 minutes. Let it cool down.
10. Sprinkle with powdered sugar before serving.
