BLUEBERRY AND OATS MUFFINS
If you are bored of regular oatmeal these muffins are perfect for healthy breakfast or for a snack. Oats have positive impact on the nervous system since they reduce stress, have a lot of protein and lift energy levels.
Makes 12 muffins
Ingredients:
1 cup of whole-wheat flour
1 1/2 of cups rolled oats
1 teaspoon of baking powder
1 teaspoon of ground cinnamon
1 egg
2 tablespoons of Greek yogurt
1/2 cup of coconut milk
3 tablespoons of melted coconut oil
1/3 cup of honey
1 package of blueberries
Preheat an oven to 400 F. Put dry ingredients (whole-wheat flour, oats, baking powder, cinnamon) to one bowl and mix it. In a separate bowl, beat together the egg, yogurt, coconut milk, melted coconut oil and honey. Add wet ingredients to dry ones. Stir it until they will be completely combined. Fill greased muffin tins and put the blueberries on the top of every muffin. Bake them for 20-25 minutes, at 400 F. Enjoy!
