CHOCOLATE MUFFINS WITH STRAWBERRIES
Healthy dessert – this is what I like the most. Maybe I make muffins too often. You can never have enough muffins though, agree? I think my friends from the time, when I was a student in Poland agree with me. We baked many of them in our apartment together and it was always so much fun. However, now I make them even more healthy and they taste just as good as they look.
Ingredients:
1/3 cup of oat flour
1/3 cup of whole-wheat flour
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
90 ml of honey
1 tablespoon of cocoa
1/2 cup of water
2 tablespoons of melted coconut oil
5 strawberries
Preheat the oven to 350 F. Line a 12-count muffin tin with parchment paper liners or grease them with cooking fat. Wash, dry and cut the strawberries into pieces. All of the ingredients put in to the bowl and mix it together. Pour the mixture into muffin molds. Put the strawberries on the top and bake for 25 minutes or until a toothpick inserted into the middle of a muffin comes out clean.
