LENTIL SOUP WITH TOMATOES

The best LENTIL SOUP with tomatoes and carrots, great option for a warm, nourishing meal during winter. For this recipe you will need red lentil. However, I’ve got Autumn Lentil Blend of red and brown lentils with yellow split peas and moong beans – delicious!

Ingredients:

3 tablespoons of olive oil

½ chopped onion

2 cloves of garlic

2 tomatoes

1 carrot

1 cup of red lentil ( I used Autumn Lentil Blend)

3 cups of water

½ teaspoon of oregano

1 teaspoon of pink salt

1/2 teaspoon of black pepper

Directions:

  1. Heat olive oil in a large saucepan. Add chopped onion and garlic. Fry it around 10 minutes, until golden brown.
  2. In the meantime, wash and cut tomatoes into small pieces.
  3. Pill and cut the carrots.
  4. Rinse 1 cup of lentil and soak in the bowl with 3 cups of water.
  5. Add tomatoes into a saucepan. Add some salt and spices such as: oregano, black pepper. Cook until tomatoes become soft.
  6. Add carrots and lentil with water.
  7. Reduce the heat to low, cover and cook at low simmer until the lentils are tender, approximately 20 – 25 minutes.
  8. Add some more spices if you need.
  9. Enjoy !

If you didn’t figure out your favorite salad for Thanksgiving yet, you’d better check this recipe out. I used quinoa as a base and added some kale, raw cranberries, blended with honey, olive oil and oranges. You can also find there nuts and pomegranate seeds. The salad is literally a mix of everything, if to think about it.  CRANBERRY QUINOA SALAD is an simple  Thanksgiving side dish for your holiday turkey.

Ingredients:

1 cup of quinoa

2 cups of water

2 large leaves of kale

2 cup of fresh cranberries

2 tablespoons of olive oil

1 tablespoon of honey

6 small oranges

¼ cup nuts

¼ cup of pomegranate seeds

 

How to cook quinoa?

Cooking quinoa is a pretty simple. It looks like any other grains or rice. Rinse the quinoa before cooking. To cook one cup of quinoa, you need to use 2 cups of water. Place the quinoa in the pot. Add the water and bring to boil. Once boiling, reduce the heat to simmer, cover the pot and cook until the water is absorbed around 15 minutes. Next, remove it and fluff the grain with a spoon

Directions:

  1. Rinse one cup of quinoa in cold water.
  2. In the pot, boil 2 cup of water and add 1 cup of quinoa.
  3. Cook it around 15 minutes, until the water is gone.
  4. Fluff the quinoa up be using the spoon and place in the bowl. Let it cool down.
  5. Wash and remove stems from kale. Chop it and add to the quinoa.
  6. In the food processor, blend cranberries, olive oil and honey.
  7. Peel and chop oranges.
  8. When the quinoa is cold, add cranberry mixture, oranges, nuts, pomegranate and mint.
  9. Mix it together and serve.

PUMPKIN MUFFINS

Time for baking. It is time for Halloween and pumpkins are everywhere. They really rock in recipes as well… pumpkin bread, pancakes, cookies… even coffee has a pumpkin flavor… So,  to follow the trend, I baked those moist and delicious pumpkin muffins and filled them with plum jam. The combo fits perfectly this Halloween mood!

Ingredients:

1 cup of pumpkin puree

300 ml almond milk

1 egg

1 tablespoon of honey

1 cup of whole wheat flour

1 teaspoon of baking powder

½ teaspoon of baking soda

1 teaspoon of cinnamon

nuts, jam, plum jam (optional)

 

Directions:

  1. Make pumpkin purée. Cut the pumpkin into pieces and bake in the oven, preheated to 350 F for 1 hour. Let it cool down and blend it.
  2. Make the dough. In a big bowl, place all of wet ingredients from the list: pumpkin purée, milk, egg, honey. Mix it up with a spoon and set aside.
  3. Preheat the oven to 350 F. Grease a muffin pan with nonstick spray. Set aside.
  4. In the other bowl, place flour, baking powder, baking soda and cinnamon.
  5. Combine wet and dry ingredients together.
  6. If you want, you can place some jelly or nuts on top.
  7. I still had my homemade plum jam so I used it as a filling, but the choice is yours.
  8. Bake muffins for 25-30 minutes.

I do not remember when was the last time I ate something more delicious than this HOMEMADE PLUM JAM. Although it took me a while to make it but it was totally worthy. If you decide to make it, choose ripe plums. They work better.
