Ingredients:

2 cups of whole wheat flour
1 teaspoon of salt
1 teaspoon of baking powder
1 teaspoon of baking soda
4 teaspoons of cinnamon 
3 eggs
½ cup of coconut oil

1 shredded zucchini 

Directions:

Preheat the oven till 350 F. In the bowl, mix all of the dry and wet ingredients. Add shredded zucchini and combine by spoon. Spread the baking pan with some coconut oil and place the dough. Bake it for 45-60 minutes.

As all of my homemade desserts, they do not have sugar. I used my favorite dates. Dates are extremely sweet. This is because they contain the high natural sugar. As they are packed with fiber, they will boost your metabolism. In addition, they have so many Vitamins and nutrients that after eating them, you are not going to get hungry easily. Also, as I said they are very sweet so you cannot eat it too much.

Another great ingredient in those balls is tahini. Tahini is a cream made out of sesame seeds. Ohh, I love tahini.  For me eating just dates with tahini seems like heaven. But, let’s talk about healthy benefits of it. Tahini is similar as a peanut butter. However, it is really good, because this is just one ingredient – grounded sesame seeds. You will buy it without any preservatives. The good thing is that it has a lot of fiber and protein, so it will go perfectly in a post workout snacks. Also, it will make you full right away!

But the coconut part makes the coconut balls amazing. Coconut flour, coconut milk and coconut flakes … ah I love coconut. Are you coconut lover as well?

Ingredients:

100 g pitched dates

1 cup of coconut flour

2 tablespoons of tahini

2 tablespoons of coconut milk

coconut flakes to cover the balls

Directions:

  1. Soak the dates in hot water for 10 minutes.
  2. Blend the dates with coconut flour, tahini and coconut milk.
  3. Make the bowls, they should remind the size of walnut.
  4. Cover them with coconut flakes.

Keep them in the refrigerator.

For a while I have been thinking how can I put more protein into my diet. While searching and trying new products out I have found TOFU.

Tofu is a soft cheese like product made from coagulation of soy milk. It has a form of soft white blocks. It is rich in proteins, minerals and calcium. It is a favorite vegans’ food, because it works as a great substitute of meat.

As a health benefits, it helps in weight loss, because it does not have many calories and provides youthful looking skin and gorgeous, thick hair. The proteins in tofu improve the elasticity of skin and toning facial muscles. As a result, it makes your skin youthful and supple.

Ingredients:

1 cup of 3 colors quinoa

2 cups of baby spinach

some salt

2 tablespoons of olive oil

2 peaches

1 avocado

100 g plain tofu

pomegranate seeds out of ½ fruit

 

Directions:

  1. Cook 1 cup of quinoa in 2 cups of water. Let it cool down.
  2. In the meantime, wash the baby spinach.
  3. In the bowl, toast spinach with salt and olive oil.
  4. Cut the peaches, avocado and tofu.
  5. Pill and take pomegranate seeds out of ½ fruit.
  6. Mix everything together.
